Ingredients:

  • 1 1/2 cups of flour (almond flour works great for a gluten-free option)

  • 1/2 tsp of. cinnamon 

  • 1/2 tsp of baking powder

  • 2 bananas 

  • 1 leafsup pack

  • 6 tbsp butter or coconut oil

  • 1/3 cup of brown sugar 

  • 2 tbsp honey

  • 1 egg or egg substitute

  • 1 tsp vanilla extract

  • Pinch Salt

  • Optional: 1 cup of toasted pecans or walnuts, chopped

Instructions:

  1. Preheat the oven to 350°F (180°C) and grease a 9x5 inch loaf pan.

  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside.

  3. In a large bowl, cream the butter(or coconut oil), honey and brown sugar until light and fluffy. Add the egg, and stir in the vanilla extract.

  8. Allow the banana bread to cool in the pan for 10 minutes before removing it from the pan and placing it on a wire rack to cool completely.
