Ingredients:
1 pack of leafsup, thawed
1 large head of broccoli, chopped into florets
1 medium onion, chopped
3 cloves of garlic, minced
4 cups vegetable broth
1 cup raw cashews, soaked in water for at least 2 hours
1 tbsp olive oil
Salt and pepper to taste
Instructions:
In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic and cook until the onion is translucent, about 5 minutes.
Add the chopped broccoli to the pot and stir to combine with the onion mixture. Cook for another 5 minutes, until the broccoli begins to soften.
